You learn on your own work.

Nobody practises on a made-up company. You bring the quote you have to send this week, the proposal that keeps taking you two evenings, the advert you have been putting off, and those are the things we work on in the room. By the time a module ends you have not learnt about the tool, you have used it on something you were going to have to do anyway.

That is also why the certificate means something. It is handed over on the third day to people who have produced work in front of the room, not to people who sat through seven slide decks.
